This wine is sourced from fewer than 13 hectares of clay-gravel hilltop vineyards, with a degree of calcareous soil. It receives a cold pre-fermentation for one week, before a long, 30 day fermentation. Maturation takes place in oak barrels for 15 months, with one third of the barrels renewed with each vintage.
In the glass, this wine bursts with notes of dark plum and cassis, enhanced by slight notes of dried leaf, toasted vanilla and roasted herbs. The tannins are generous and chewy, fit for any number of pairings.
